I love crockpot chicken fajitas! Crockpot meals in general are amazing but this one in particular is by far one of my favorite meals to cook when I feel like having a hearty home cooked meal, but I don’t feel like slaving away in the kitchen for hours.
Crockpot meals are low maintenance, easy to throw together and not to mention they make your home smell soooooo good throughout the day, while it’s prepping your meal!

How to Make Crockpot Chicken Fajitas
Start by protecting your crockpot with these liners. Before I found these- wait, let me rephrase, before I even knew these existed— I was constantly having to scrub dried on food out of the insert of my crockpot after it cooled down hours post whatever meal I made.
Not only has this saved me clean up time, but it’s saved me cost on water I was running to scrub out the insert. All I have to do now is toss the bag straight into the trash because they’re disposable.

How Easy Is This Crockpot Chicken Fajita Recipe?
You can make this recipe with alot of ingredient you should already have in your pantry. The less common ingredients that may have you running to the store are the chicken breasts, peppers, onions, lime and honey.
Other than that, this meal is fairly cheap to buy and make!
It’s great for a family dinner or if you’re meal prepping for the week.
Pair it with rice like I mention below or you can use tortillas and eat them like tacos.

Crockpot Chicken Fajitas
Equipment
- slow cooker
- can opener
- whisk
- knife
- ladle
Ingredients
Main Ingredients
- 2 lbs chicken breast halved
- 1 can petite diced tomatoes with green chiles
- 1 whole red bell pepper julienned
- 1 whole orange bell pepper julienned
- 1 whole yellow bell pepper julienned
- 1 large yellow onion halfed and sliced
- 4 cloves minced garlic
Spices
- 2½ tsp chili powder
- 2 tsp ground cumin
- 1 tsp paprika
- ¾ tsp ground coriander
- 1 tsp salt
- ¾ tsp pepper
Post Cook Time
- 2 tbsp fresh lime juice
- 1 tbsp honey
Instructions
Prep
- Pour half of the canned tomatoes into the bottom of the crockpot
- Spread into an even layer
- Top with half of the peppers and half of the onions
- Sprinkle garlic in
- Top with chicken breasts
- Whisk chili powder, cumin, paprika, coriander, salt and pepper together in a bowl
- Sprinkle half of the seasoning evenly over the chicken
- Flip chicken over
- Sprinkle the other half of the seasoning over chicken
- Layer with remaining tomatoes
- Top with remaining peppers and onions
Cook
- Cover and cook on HIGH for 3-4 hours or LOW for 8-10 hours
- Ladle out 1 cup of broth and discard
- Shred chicken with two forks while still in the crockpot
- Whisk together lime juice and honey in a small bowl
- Add to crockpot
- Season with salt to taste
- Toss gently
Serve
- Serve warm with tortillas or ontop of rice
- Top with sour cream, shredded cheese and other toppings of choice
